Before switching to Paleo, I would often make casseroles. Casseroles are easy and come on, let's be honest, they are delicious. Most of the casseroles have pasta, condense soups and cheese, which are just not that good for you.
Here is my Paleo casserole creation!
I made this great spaghetti squash casserole. It was not as quick and simple as most casseroles but it was delicious. Let's just say the work and effort was worth it. Hubby said the casserole was amazing.Chicken Spaghetti Casserole
The Chicken:
6 - 8 chicken tenders (nitrate free from Trader Joe's)
1/2 cup coconut milk
1 TBSP Red Curry Paste (Mild)
Add the chicken and spices. Mix around in a baggie and let sit. I soaked mine for 20 hours. You do not have to let it set that long. It just happened that way! Letting the meat sit for an hour would do! Pan sear the chicken until both sides have nice brown colors.
Asparagus
2 cups Spinach
1 Spaghetti Squash
2 cups tomato sauce
garlic, parsley and Trader Joe's 21 Blend
Bake the Spaghetti Squash (with coconut oil) at 400 degrees for 40 - 60 minutes. Let it cool and fork out.
In Olive Oil saute asparagus and spinach. When the spinach is wilted add tomato sauce and the cooked spaghetti squash.
In a 9x9 pan add chicken and top with the spaghetti squash mixture.
Bake at 350 degrees for 20 minutes or until the chicken is completely cooked.
