Stir-Fry and Zucchini Noodles

If you are a follower of my facebook page, you know I tried something new last night. It was something that I thought about for awhile and was hoping it tasted as good as I imagined.... I was wrong. It was terrible... well, the boys ate it. Hubby and I just could not... Hubby said it looked amazing but tasted just ok. I have not had a complete fail in awhile so I guess it was bound to happen! Ha! 

Thankfully - I have this delicious meal that we had before we left on vacation and have not blogged about! Lucky you --- you still get a recipe today even when such a FLOP yesterday! :) 


I love throw together meals with meat and vegetables! I love stir-fry! I love chili! I love anything you can make with loads of vegetables and meat! 
 This time I browned ground beef with onion. Added Broccoli, carrots, red bell pepper, 1/2 can diced tomatoes, hand full of cherry tomatoes and seasonings.

 I love using zucchini as noodles! Just an extra way to include another vegetable!!!! :)

Topped the noodles with meat mixture!

Full of flavor and super quick! The most time consuming part was using the madeline for my zucchini noodles. It was a real quick meal!

The Ingredients:
1 lb ground beef
1 small onion
1 cup broccoli
1/2 can of diced tomatoes
10 + baby carrots diced
1/2 red bell pepper
1/2 cup chicken broth
Trader Joe's 21 seasoning salute
garlic powder
nutmeg
basil

The Directions:
Brown ground beef and onion. Seasoning meat after draining the fat with nutmeg and garlic powder. Add broccoli and 1/2 cup of chicken broth. Cook on Medium heat. After 5 - 10 minutes add carrots, tomatoes, peppers, diced tomatoes and the rest of the seasoning.

In a boiling pot of water add the zucchini for 2 - 5 minutes. Strain water.

Top the zucchini noodles with the meat and vegetable mixture.

Teething Biscuits

The last few weeks, I have been coming across homemade teething crackers/cookies for babies. I have thought about making them but every time I go to the store I forget to pick up some molasses.

Yesterday, in our food share, we got molasses!!!! Can you believe it??? I was so excited! Beyond excited actually.

Today, I looked up the recipes. I compared. I altered. Milled my own Brown Rice (into flour!).

I FLOPPED... Kind of. I burnt them! :) I was so excited about them - I left them in a little long. WHOOPS!


I will try again tomorrow!

Micah loves them. I guess they are not burnt just browned! :)

Teething Biscuits


2 Tbsp honey (not suitable for babies under one year of age)
1 Tbsp molasses
2 Tbsp oil (I would use coconut oil or butter)
1 egg yolk, beaten
1/2 cup rice or millet flour (I didn't have any on hand so I milled my own Brown Rice Flour!)
3/4 cup flour of your choice (spelt, wheat, kamut, barley)
Stir together the honey, molasses, oil and egg yolk. Mix the flours, and add to make a stiff dough. Since flours differ, if it is too thick, add a Tbsp of milk. If too soft, add a bit more rice or millet flour.
Roll dough to 1/4 inch thickness. Cut into rectangles 1 x 1 1/2 inches. Place on an ungreased cookie sheet. Bake at 350 F until golden brown, about 15-20 minutes.

Pumpkin Pound Cake (attempt #1)

FAILED

Not sure exactly what went wrong but it went terribly wrong. The flavor was AWFUL... The pound cake was maybe 1 inch thick.

I did try to make a healthy version but that was just terrible.

I will not give up!

I am not afraid to be open and honest with you. I have nothing to hide!!!!

I have been on a quest to find a healthy sandwich type bread recipe. I do not know if it is the recipes or the cook but I can't seem to get them to rise. I follow the directions - EXACTLY.

HELP! :)

I think this is where the PROBLEM is - just need to know how to fix it. When I add the warm water, yeast and honey - WHAT does proof look like??? How do I know if it is going to work? If it doesn't proof, is it my fault? If so, what did I do wrong? Is it the yeast? How do I know what a "right" "good" yeast is???

PLEASE HELP! :)

I would really like to find a good bread recipe that I can make for my family weekly.

Please post comments if you know what my problem is and how I can fix it.

Brownies

I tried to make brownies with zucchini today.

It was a flop because I substituted the sugar with sweet potato. I made it with cocoa powder and the flavor was very pronounced. Next time I will need to add honey or some type of sugar to take off that taste.

I will figure this out!

FLOPS

I am sure you are wondering where I have been...

I have tried to make a few new things this week and they are were FLOPS... I am going to try and make them again in hopes that they will not be FLOPS.

My FLOPS:
Zucchini Crackers
Fava Beans
Strawberry gluten free bread

We also have been eating a lot of salad. Our food share has been giving us 2 head of lettuce and a bag of spring mix.
