Lettuce Tacos

We are a huge fan of Lettuce Wraps at PF Changs. I mean, come on, who doesn't like Lettuce Wraps. They are delicious. They are fun. You scoop the meat (however much you want) into a crisp piece of lettuce. You add sauce (I don't) and roll them up and ENJOY!

This gave me an idea... Lettuce Tacos. Just like the Lettuce Hamburger another "normal" American dinner turned Paleo. We replace the Taco shell with lettuce. Everyone enjoyed these!

 This is an instant favorite. There are so many possibilities with tacos. Looking forward to making different variates!

The Ingredients:
1 - 2 lbs ground beef
1 carrot, diced small
1/2 can water chestnuts
Lettuce
1 onion, chopped
Garlic Powder
Paprika
Chili Powder
Cumin
Avocado
Tomatoes
Salsa, optional
Lime

The Directions:
Brown the ground beef and onions. Add seasoning when meat is just about done. Drain. Add carrots and water chestnuts into the ground beef and heat.
Wash lettuce. Keep in big, bowl pieces.
Top with tomatoes, avocado, lime juice or salsa.

ENJOY!!!

Chocolate Avocado Shake

This raw, healthy milkshake is not only incredibly delicious, but contains an abundant amount of nutrients. You'll never have to feel guilty drinking a milkshake again!!!!
My 2 1/2 year old thought this was a ice cream milkshake! :) It is that good!!!

The Ingredients:
1 Avocado
2 TBSP Cocoa Powder
1 cup RAW milk (we prefer RAW but local or whatever kind of milk you have)
2 TBPS RAW Honey (we prefer RAW but local or whatever honey you can get is fine too!)
1 tsp Vanilla
Handful of ice

The Directions:
Put all the ingredients in a blender for a minute or until smooth. You can add more or less milk, depending on how you like the thickness of the shake to be.

*** Next time I am going to add a banana! I think it would be amazing with a banana!

Strawberry Avocado Salsa

Once again, Thank you food share for DELICIOUS strawberries.

My family loves strawberries and we love avocados. So my thought... Why not mix the two for a healthy snack! This turned out wonderfully!





  • The Ingredients:
  • 1 cup finely chopped strawberries
  • 1/4 cup finely chopped peeled avocado
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons chopped fresh cilantro
  • 1/2 teaspoon grated lime rind
  • 2 tablespoons fresh lime juice
  • 2 teaspoons finely chopped seeded jalapeƱo pepper
  • 1/4 teaspoon sugar

The Directions:
Add all ingredients into a bowl and toss gently.

**This time I did not have red onion. I just used strawberries, avocado, lime juice, cilantro, and a little sugar.
