Oprah Show - Health Crisis

I know, I do not usually post twice in one day but I have to share this -- NOW!

This week on Oprah --- Oprah challenged her staff to go vegan for seven days. I am not advertising the section of the show where they talk about eating Vegan.

I am not writing on here to suggest a vegan lifestyle... I do not like how much soy her guest speaker advertised. SOY IS BAD, remember my post.

I like meat! I like my meat, from my local farmer. I like everything about my meat. I like the way my farmer treats his cows and how he talks to them and how he feeds them. He is even kind to them all the way to the end.

One part of the show that I couldn't help watching OVER and OVER and OVER again is when Oprah interviews Michael Pollan. I am not joking you when I say I watched this short clip 10+ times... It is just crazy to me. He makes some really crazy points.

Did you know 75% of Health care spending is spent on chronic diseases linked to diet??? Yes, this is bankrupting us... We have more access to healthier foods and the American Diet is now a catastrophe.

To watch the video, click here.

Thankfully, this is how my family and I eat.
We barely eat anything processed. We have little to NO white. (sugars, grains, flours) Meals do have to be planned out and do take a little more time. We only have this one body and we plan on staying awhile.

How do you and your family eat???

McDonald's again NO THANK YOU

McDonald's has made the news once again. Please read this article, McDonalds, public school lunch beef treated with ammonia.

"Officials at the United States Department of Agriculture endorsed the company’s ammonia treatment, and have said it destroys E. coli “to an undetectable level.” ...
McDonald’s, Burger King and other fast-food giants use it as a component in ground beef, as do grocery chains. The federal school lunch program used an estimated 5.5 million pounds of the processed beef last year alone."

If you missed my post about this

Click here to read what this beautiful pink stuff is!
WARNING: you might was a garbage can next to you... You might get sick.

If you have not looked into local farmers NOW is the time. Ammonia is not NORMAL... If you cannot find a local farmer, please research "healthier" meat choice. I will be happy to point you in the right direction, just email me!

Taco Bell made the news this week, too! Finally - the truth is coming out. Check out the article if you missed it in Tuesday's post, click here.  Taco Bell's ground beef or should I say ground filler contains only 30% beef. That is 10% lower than US Department of Agriculture requirements. Which tell me if I am wrong, I don't want to consume anything less than 100% real meat. Call me crazy!

Pecan crusted Chicken (100% chicken!)
Brussels Sprouts
Cauliflower Rice
The Chicken:
2 TBSP Dijon Mustard (you can use more)
2 TBSP Raw Honey (you can use more)
1/2 cup chopped pecans

If I had more time I could have made this more like fried chicken style.

Mix together the dijon mustard and honey.

I then dipped the chicken into the mixture and topped it with the Pecans. Bake at 350 degrees for 25 - 30 minutes or until the chicken is completely cooked.

This is a close up of the cauliflower rice.
The baby is LOVING it!!! I have been mixing it with his food!

I tried a different method this time! I put the cauliflower in the microwave for just 30 seconds. I then added it to the food processor and pulse. If you do not have a food processor a blender will do.

In a saute pan I added a little coconut oil and melted. Then add the cauliflower rice and saute for just a couple of minutes. I also added a little pepper.

I found this method more rice like when you aren't adding it to a soup. It was tender and everyone loved it! Baby is still enjoying it!

Why are we in such a hurry?

Have you ever noticed how impatient we all have become???

This weekend I was sitting at a light waiting for the light to turn green and I noticed something pretty funny. The car in front would scoot forward a little, then the car behind it would shoot forward and the car behind it would scoot forward and so forth. The car in front would then scoot up just a little more and the whole process began again. Why have are we in such a hurry that we have to continuously nudge forward even though the light is still red?

Next time you are stopped at a light, watch! You will get a kick out of it!

I am guilty of this, too!

When did this change? Why are we in such a hurry?

Maybe it has to do with all the change in the last 10 years. We have so many things designed to make like faster and "easier."  Kindness to other just went out the door. Not sure when people not stopped caring for others but hubby and I have surrounded our family with great people and excellent neighbors. (check out this post on how to help out your neighborhood food bank from reader (and friend) Heather @ All Kinds of Goodies) Everyone has cell phones. You don't have to wait to talk to someone if they aren't home. There are FAST FOOD restaurants everywhere... Really there are not too many corners out there without one. We have changed our way of eating and we are seeing the results from it.

It is crazy that the obesity rate is still sky rocketing and the number of diabetes is on an all time high. I remember seeing a statistic awhile back that said 58 million were obese. Even more disturbing, a few years ago, I heard that by 2012 the "norm" for children will be obese.

THAT IS CRAZY... I remember coming home after hearing that and telling Hubby "I will not accept that. I will do my best to feed my children healthy nutritious foods and allow them to be healthy. If obese is "norm" my children will be not norm"

That was reason #1 we changed...

You see, I have said it before, but we are still working on healthy changes! Yes, my 3 year old has had fast food. No, I am not proud of that. Yes, Micah will NEVER eat fast food. (please note: There are healthier choice, like Chipolte, for example, and I am sure he will have Chipolte)

Yes, Fast food is fast and a great fix when "oops I forgot to plan for dinner." And Yes, it is cheap. Hubby and I have both said fast food is really a help for those who need to feed a lot of people for less. McDonalds is offering 50, yes I said 50 chicken McNuggets for $9.99... That is just craziness... Where else can you get a meal for a family under $10. It is a quick fix.

I am not suggesting you to go to McDonald's for dinner... It is not meant to be consumed daily, if at all. Today, I just found a story about Taco Bell being sued because the meat isn't meat. It doesn't meat the minimum standards... YUCK. The meat is only 30% meat. 70% is other junk and fillers. To read the article, click here.

Hubby was out of town this past weekend. I should have planned ahead and prepared us some food but I got busy. I did not eat like I should and I am paying for it now. I went to bed Sunday not feeling well and woke up Monday with a terrible headache, that lasted all day. Monday I spent the day sluggish and lacked energy. My stomach was upset and I couldn't really eat anything without it coming right back up. I even had a few face breakouts.

So many of us have just become so busy in everyday life that so many have forgot or dropped home cooked meals. Many Americans do not use their kitchen and even more do not know how to cook. Let's bring back home cooked meals! That is my mission. If you are a reader and struggle in the kitchen contact me (call, text, facebook, email me) and I will help you. I pride myself on coming up with or finding real easy recipes that are packed with nutrition and color and are full of taste.

Hubby and I enjoy sitting together with our boys at the dinner table and spending that time with just our family. No phones. No interruptions. Just us!!! We enjoy our memories!!!! We enjoy our 3 years prayers and stories! We love our time!!! Yes, sometimes he gets home late and we are not able to eat together but 6 nights out of 7 we are together!

Beef Jerky

I love sharing! I love passing along recipes! I love creating and sharing!
THAT IS WHO I AM!!! I am a sharer, after all, sharing is caring! :)

I have spent the last day or so wondering -- do I really want to share this DELICIOUS jerky with you???

Lucky for you -- I don't like secrets! and I do want to share!!!!

Beef Jerky is a great snack and is a favorite for those doing Paleo. A great snack or even source of protein for lunch.

I have been in search for a quality beef jerky recipe that I could season myself and dehydrate in my oven.  I do not need another kitchen gadget - although I still have two in mind! :)

Recipes I found called for flank steak or a couple other cuts.

I tried two different kinds of beef cuts. I talked to my farmer Jack from J and J and he recommended two cuts and I wanted to find the BEST! I did them both! Round Steak and Chuck roast. Round Steak was good but was harder for me to cut. Still was good!

CHUCK ROAST WINS!!!!!
hands down

Chuck Roast was easier to cut into bigger thinner pieces and it was just easier to handle.

The meat sat in the marinade in the fridge overnight.

Laid the meat out on a cooling rack on top of foil wrapped cookie sheet.

After 4 1/2 hours ---- BEEF JERKY!!!!

The Ingredients:
1 Chuck Roast (Mine was about 4 - 5 lbs)
2 tsp Lemon Pepper
1 tsp Sea Salt
1 tsp Fresh Ground Pepper
3 - 4 garlic cloves, minced
1 cup soy sauce like product (Coconut Aminos, Braggs Amino, Soy Sauce)

The Directions:
I started with frozen meat. Some recipes say partially thaw meat then cut. I tried both partial thawed meat and thawed meat. Thawed meat cut easier, for me.

When ready - Preheat oven to 170 degrees.
Slice meat into 1/10th inch thickness strips. (If you need to use a meat hammer - GO FOR IT!!!)

Mix the coconut aminos with minced garlic in a bowl.
Toss sliced beef into with the coconut aminos and minced garlic in a ziploc back.
Allow meat to marinate from 2-24 hours in refrigerator.

*If using an oven, set up racks over cookie sheets lined with aluminum foil (for easier cleanup).
Lay strips of beef out on racks, add salt and pepper if desired, and place racks in oven.

Cook at 170 for 4-6 hours. Thinly sliced meat will take less time, thicker sliced meat will take longer. Open oven door slightly for last ~2 hours.

Hint - I flipped my meat around hour 2. I did not leave my door open because of my small children.
Also, on the thicker pieces of meat --- use the meat hammer!!!It works WONDERS!!!

Ground Beef RECALLED

Yet another reason we buy local meat....

First Class Foods, Inc of Hawthorne recalls almost 40,000 pounds of ground beef previously distributed to 6 States. This is because of possible Escherichia coli contamination.

The ground beef is being recalled in New York, New Jersey, North Carolina, California, Wisconsin, and Washington. The establishment number of the ground beef is “EST.18895” and they have been producedDecember 7 and December 16.

YUCK -- To read the article and to see if you are one of the six states, click here

Thank you J & J for providing my family safe, local meat. Where the cows are grazing and are free to roam. Thank you for not over crowding the cows and giving them enough room where they are standing in their own poop. Thank you !!!!

Meatball

Happy New Year!!!!

Happy 2011!!!! I am looking forward to another WONDERFUL year!

I set Resolutions - don't keep em!

This year though... I am going to be able to keep mine.

Here is what 2011 has in store for me!
** I am going to write in a journal, every day/night!!! I am going to write of my blessings!

--- Thank you, Twelve Months of Bliss and All Kinds of Goodies, for giving me this idea... I am also going to be writing daily happening of the boys (quotes or sayings).

** Nutrition and Fitness.
(Vegetables, some fruits, grass fed meat and nuts)

(No dairy, No Grains, No Legumes)
--- We will continue on our eating adventure. (which I will be documenting!)
I will continue working out and getting back into shape! :)  (which I will also be documenting)

**I plan on cooking a fish dish at least once a week.

** I plan on cooking 2 - 3 new (Paleo) dishes a week.

Why do we choose resolutions that are impossible to keep?? Why do we wait to start a resolution until January 1? Why can't we just start a resolution in March or in September or when the idea comes to us???
I think that my resolutions are practical and worth keeping! They are simple enough that after a few weeks, I will still want to keep them. They are challenging at the same time, that I will have to push myself (and remember) to do them! I am excited to start the year and really excited to see if I am able to make it the WHOLE year achieving my goals!

HERE IS TO 2011!!!!

Almond Meal - just in case you didn't know what I mean.
I leave my Almonds roughly chopped - personal preference!

Don't over crowd the meatballs. I think I saw that on Rachel Ray once.

1/2 yellow bell pepper, chopped
1 red onion, chopped
3 garlic cloves, minced
2 TBSP Parsley

1 cup Almond Meal

The Directions:

What's in a label...

I started this blog for a couple of reasons. I wanted to share yummy HEALTHY recipes with family and friends! But more importantly, I want to share information (dirty secrets) the food industry doesn't want you to know.

I have mentioned it before but the way our family eats changed after watching Food, Inc.

Here is one of those "dirty" little secrets the food industry doesn't want you to you know...

The soup industry is thriving on the newest craze"hidden vegetables" but that is not all they are hiding.
Anyone know what “mechanically separated chicken” is???

That is mechanically separated chicken.
That  is the result of a machine scraping clean every ounce of chicken meat off of the bones and putting it through a high pressure sieve.  Then, sources say, “because it’s crawling with bacteria, it will be washed with ammonia…because it tastes gross, it will be reflavored artificially.  Then, because it is weirdly pink, it will be dyed with artificial color.”

There’s no way that can be healthy for kids.

Thankfully - our three year old does not consume "mechanically separated chicken" but enjoys locally raised, hormone free, grass fed chicken. Otherwise, I would have been spending some time in the bathroom -- SICK... I am already sick to my stomach and disgusted by just looking at this picture... This is considered normal and healthy...

I think not!

I have created some delicious and real "healthy" soup recipes my boys enjoy! Maybe give them a try before serving "mechanically separated chicken."

Why don't you give them a look, here!

The Chicken that SHOULD be banned

The Chicken Which Should be Banned

Posted By Dr. Mercola | November 08 2010

Do you put dimethylpolysiloxane, an anti-foaming agent made of silicone, in your chicken dishes?
How about tertiary butylhydroquinone (TBHQ), a chemical preservative so deadly that just five grams can kill you?
These are just two of the ingredients in a McDonalds Chicken McNugget. Only 50 percent of a McNugget is actually chicken. The other 50 percent includes corn derivatives, sugars, leavening agents and completely synthetic ingredients.
Organic Authority helpfully transcribed the full ingredients list provided by McDonalds:
"White boneless chicken, water, food starch-modified, salt, seasoning (autolyzed yeast extract, salt, wheat starch, natural flavoring (botanical source), safflower oil, dextrose, citric acid, rosemary), sodium phosphates, seasoning (canola oil, mono- and diglycerides, extractives of rosemary).
Battered and breaded with: water, enriched flour (bleached wheat flour, niacin, reduced iron, thiamin mononitrate, riboflavin, folic acid), yellow corn flour, food starch-modified, salt, leavening (baking soda, sodium acid pyrophosphate, sodium aluminum phosphate, monocalcium phosphate, calcium lactate), spices, wheat starch, whey, corn starch.
Prepared in vegetable oil (Canola oil, corn oil, soybean oil, hydrogenated soybean oil with TBHQ and citric acid added to preserve freshness). Dimethylpolysiloxane added as an antifoaming agent."

Don't forget to comment... Comment as many times as you want to increase your chances to win!

Potato or Tomato? Jamie Oliver's Food Revolution

Many of you this summer watched Jamie Oliver's Food Revolution.

It doesn't shock me that kids do know what the different types of vegetables there are.  I wanted to try this out with Joshua, my 3 year old. He was doing really good until the end -- when I side tracked him with another topic. He did great! After He is ONLY 3...

Not bad... Couldn't remember Bell Peppers and Radish. I am impressed. It saddens me to know that there are some kids out there who do not know the different type of vegetables, like in the video above.

When we re-watched the video with Joshua in it, he added some more pointers... I love Brussels Sprouts. Do you? I love Zucchini. Do you? Mommy I LOVE Broccoli. Do you?

The point of my post is Food Revolution can use your help!

Dress up as the grossest processed food you know of, go in after 6 p.m. on Halloween, and get a $2 burrito or order of tacos. Check out this great video of Steve and Jamie explaining the event!

Oven Omelet with Sweet Potato Crust

Weekends are not always good food days. We are extra busy - running around - doing fun activities - running errands. Meals are always put off till the very end. I plan all week and have a plan and weekends - NOT SO MUCH! I am getting better.

Yesterday, was no different. I was out most of the afternoon and lost track of time. I had forgot to take out meat to thaw and I was not in the mood for fish.

Sometime in the past few weeks I came across an oven omelet recipe and it looked great! When it came time to find it - I couldn't! so it was time to improvise and go off memory!

Here is what I could remember: It had sweet potato crust. There was eggs. There were vegetables.

Here is what I came up with!

The Ingredients:
1 sweet potato, sliced (I left the peel on mine)

6 whisked eggs, farm fresh
1/2 finely chopped sauteed onion
1 finely chopped sauteed red pepper
2 cloves minced sauteed garlic
2 cups lightly steamed, thinly sliced broccoli
1/2 cup sliced Applegate Farms, Chicken & Red pepper, Breakfast Sausage (1 link)
1/2 cup Raw Cheese
1/2 cup finely chopped sun dried tomatoes

The Directions:
Slice the sweet potato and arrange in the pie pan. Mix all the other ingredients in a bowl and pour over sweet potatoes. Top with raw cheese.

Bake at 350 for about 40 minutes.

** Baby enjoyed the eggs and sweet potato! ** This was quick and easy and was a hit! We ate the whole thing.

McDonald's - NO THANK YOU

This is one of the craziest, grossest things I’ve ever seen. This burger just won’t quit. If this is what a McDonald’s Happy Meal looks like after six months, imagine what your body has to go through to break it down! Ah, food science…

From NPR – Last April, artist Sally Davies bought a McDonald’s Happy Meal at her local Golden Arches. But she didn’t eat it. She put the burger and fries on a shelf in her apartment and photographed it every day. She posted the pictures of her aging meal on her Flickr page. Six months later, Davies says the food feels plastic and looks shiny but still no mold.
You can view her entire collection of the decomposing Happy Meal at her Flickr account.

RAW MILK

“If people let the government decide what foods they eat and what medicines they take, their bodies will soon be in as sorry a state as are the souls of those who live under tyranny.” ~Thomas Jefferson

Yesterday a friend of mine sent me an email with a very interesting story... I must pass this on... I must share it...

Have you heard of Morningland Dairy? They are a farm in Missouri. They graze cows. They try to be as natural as possible. They sell RAW milk and RAW cheese. They ship.

The FDA has shut them down. They were ordered to destroy 5o,000 pounds of raw cheese, despite clean reports. I have been reading all sorts of stories on this. I am intrigued.

The 7 foods experts won't eat.

I am sorry... I have been on a ready frenzy today. Health topics interest me. It is interesting to me! I found an article that lists The 7 foods experts wont eat.
Smoking was proven to be cancer-causing, tanning beds were shown to be on par with arsenic, but what about canned tomatoes, corn-fed beef, conventionally grown potatoes? What would it take to convince you to clean out your pantry and change your eating habits? Scientists, doctors, even farmers were asked what foods they refuse to eat. The responses had nothing to do with things like donuts due to fat content, or white bread because of the concentration of empty carbs. We’re talking seemingly healthy things like tomatoes, beef, popcorn, potatoes, salmon, milk, and apples. For them, it’s all about how they are produced and packaged.
1. Canned Tomatoes
The expert: Fredrick vom Saal, PhD, an endocrinologist at the University of Missouri who studies bisphenol-A
The problem: The resin linings of tin cans contain bisphenol-A, a synthetic estrogen that has been linked to ailments ranging from reproductive problems to heart disease, diabetes, and obesity. Unfortunately, acidity (a prominent characteristic of tomatoes) causes BPA to leach into your food. Studies show that the BPA in most people's body exceeds the amount that suppresses sperm production or causes chromosomal damage to the eggs of animals. "You can get 50 mcg of BPA per liter out of a tomato can, and that's a level that is going to impact people, particularly the young," says vom Saal. "I won't go near canned tomatoes."
The solution: Choose tomatoes in glass bottles (which do not need resin linings), such as the brands Bionaturae and Coluccio. You can also get several types in Tetra Pak boxes, like Trader Joe's and Pomi.
2. Corn-Fed Beef
The expert: Joel Salatin, co-owner of Polyface Farms and author of half a dozen books on sustainable farming
The problem: Cattle evolved to eat grass, not grains. But farmers today feed their animals corn and soybeans, which fatten up the animals faster for slaughter. More money for cattle farmers (and lower prices at the grocery store) means a lot less nutrition for us. A recent comprehensive study conducted by the USDA and researchers from Clemson University found that compared with corn-fed beef, grass-fed beef is higher in beta-carotene, vitamin E, omega-3s, conjugated linoleic acid (CLA), calcium, magnesium, and potassium; lower in inflammatory omega-6s; and lower in saturated fats that have been linked to heart disease. "We need to respect the fact that cows are herbivores, and that does not mean feeding them corn and chicken manure," says Salatin.
The solution: Buy grass-fed beef, which can be found at specialty grocers, farmers' markets, and nationally at Whole Foods. It's usually labeled because it demands a premium, but if you don't see it, ask your butcher.
3. Microwave Popcorn
The expert: Olga Naidenko, PhD, a senior scientist for the Environmental Working Group,
The problem: Chemicals, including perfluorooctanoic acid (PFOA), in the lining of the bag, are part of a class of compounds that may be linked to infertility in humans, according to a recent study from UCLA. In animal testing, the chemicals cause liver, testicular, and pancreatic cancer. Studies show that microwaving causes the chemicals to vaporize—and migrate into your popcorn. "They stay in your body for years and accumulate there," says Naidenko, which is why researchers worry that levels in humans could approach the amounts causing cancers in laboratory animals. DuPont and other manufacturers have promised to phase out PFOA by 2015 under a voluntary EPA plan, but millions of bags of popcorn will be sold between now and then.
The solution: Pop natural kernels the old-fashioned way: in a skillet. For flavorings, you can add real butter or dried seasonings, such as dillweed, vegetable flakes, or soup mix.
4. Nonorganic Potatoes
The expert: Jeffrey Moyer, chair of the National Organic Standards Board
The problem: Root vegetables absorb herbicides, pesticides, and fungicides that wind up in soil. In the case of potatoes—the nation's most popular vegetable—they're treated with fungicides during the growing season, then sprayed with herbicides to kill off the fibrous vines before harvesting. After they're dug up, the potatoes are treated yet again to prevent them from sprouting. "Try this experiment: Buy a conventional potato in a store, and try to get it to sprout. It won't," says Moyer, who is also farm director of the Rodale Institute (also owned by Rodale Inc., the publisher of Prevention). "I've talked with potato growers who say point-blank they would never eat the potatoes they sell. They have separate plots where they grow potatoes for themselves without all the chemicals."
The solution: Buy organic potatoes. Washing isn't good enough if you're trying to remove chemicals that have been absorbed into the flesh.
5. Farmed Salmon
The expert: David Carpenter, MD, director of the Institute for Health and the Environment at the University at Albany and publisher of a major study in the journal Science on contamination in fish.
The problem: Nature didn't intend for salmon to be crammed into pens and fed soy, poultry litter, and hydrolyzed chicken feathers. As a result, farmed salmon is lower in vitamin D and higher in contaminants, including carcinogens, PCBs, brominated flame retardants, and pesticides such as dioxin and DDT. According to Carpenter, the most contaminated fish come from Northern Europe, which can be found on American menus. "You can only safely eat one of these salmon dinners every 5 months without increasing your risk of cancer," says Carpenter, whose 2004 fish contamination study got broad media attention. "It's that bad." Preliminary science has also linked DDT to diabetes and obesity, but some nutritionists believe the benefits of omega-3s outweigh the risks. There is also concern about the high level of antibiotics and pesticides used to treat these fish. When you eat farmed salmon, you get dosed with the same drugs and chemicals.
The solution: Switch to wild-caught Alaska salmon. If the package says fresh Atlantic, it's farmed. There are no commercial fisheries left for wild Atlantic salmon.
6. Milk Produced with Artificial Hormones
The expert: Rick North, project director of the Campaign for Safe Food at the Oregon Physicians for Social Responsibility and former CEO of the Oregon division of the American Cancer Society
The problem: Milk producers treat their dairy cattle with recombinant bovine growth hormone (rBGH or rBST, as it is also known) to boost milk production. But rBGH also increases udder infections and even pus in the milk. It also leads to higher levels of a hormone called insulin-like growth factor in milk. In people, high levels of IGF-1 may contribute to breast, prostate, and colon cancers. "When the government approved rBGH, it was thought that IGF-1 from milk would be broken down in the human digestive tract," says North. As it turns out, the casein in milk protects most of it, according to several independent studies. "There's not 100% proof that this is increasing cancer in humans," admits North. "However, it's banned in most industrialized countries."
The solution: Check labels for rBGH-free, rBST-free, produced without artificial hormones, or organic milk. These phrases indicate rBGH-free products.
7. Conventional Apples
The expert: Mark Kastel, former executive for agribusiness and codirector of the Cornucopia Institute, a farm-policy research group that supports organic foods
The problem: If fall fruits held a "most doused in pesticides contest," apples would win. Why? They are individually grafted (descended from a single tree) so that each variety maintains its distinctive flavor. As such, apples don't develop resistance to pests and are sprayed frequently. The industry maintains that these residues are not harmful. But Kastel counters that it's just common sense to minimize exposure by avoiding the most doused produce, like apples. "Farm workers have higher rates of many cancers," he says. And increasing numbers of studies are starting to link a higher body burden of pesticides (from all sources) with Parkinson's disease.
The solution: Buy organic apples. If you can't afford organic, be sure to wash and peel them first.
