Chicken Fajitas and Mexican (Cauliflower) Rice

I have something to show you... 
I want to show you a (real) letter that is from United Health Care. 

I feel obligated to show you...  
Please read this letter!

Here is a recipe for a delicious Mexican Dinner!!!! :)
 The Chicken Fajitas

The Ingredients:
chicken tenders cut in half
1 red bell peppers
1 orange bell pepper
1 yellow bell pepper
garlic powder
nutmeg
cumin
pepper

The Directions:
In a WOK add coconut oil and cook the chicken strips at a medium, medium low heat. Once the chicken is cooked add bell pepper strips. Add seasonings. 

Serve with Lettuce, Avocado and Mexican (cauliflower) rice. 
Mexican (Cauliflower) Rice

The Ingredients:
1 head of cauliflower
1/4 - 1/2 cup homemade salsa

The Directions:
Steam cauliflower just until the cauliflower is about tender. Add cauliflower to food processor and pulse until the cauliflower is rice like. Add cauliflower to frying pan and add salsa. Cook until the cauliflower is warm throughout.

  1. First of all I don't vaccinate so that is my first issue with the letter. Secondly, they are bribing the parents with gift cards which in this economy probably is tempting for some. So, lets inject a child with toxins and then got to McDonald's to further weaken their immune system with junk..

    At the same time the letter is kind of positive in way. Since they have to bribe the parents with free shots, gift cards, and free rides, then I assume and hope this means less parents are vaccinating the children. And that's the reason they need to take drastic measures to convince them to go...

  2. I work in public health and am an advocate of vaccination. I can understand why some people would take offense to this type of outreach, but I applaude the efforts that are going into providing lifetime protection to children against dibilitating dieseases. There are so many conflicting messages out there about vaccination and making that decision to vaccinate your child is a difficult one. The efforts that public health is putting into vaccination with this letter is promising, by providing free vaccines (which are available in almost every state), transportation to recieve those vaccines and an incentive for the parents to get their child vaccinated I think is meant to enable parents to choose vaccination when they otherwise wouldn't due to cost and transportation barriers.

  3. I understand where Valoree is coming from.. but that doesn't excuse using such (bad for your health) bribes to get people to do something "Public Health" is considering healthy and necessary. It comes across as hypocritical, and ironic. I'm sure that's not the only way they could've gotten their point across. I have been vaccinated.. I grew up as the youngest of six.. and everyone was vaccinated.. I don't intend to continue the tradition with my daughter. Every single time I had a flu shot.. I got sick immediately afterwards.. ever since I stopped getting the flu shot.. I haven't had the flu in ages.. and when I do get sick.. I go based on pros and cons.. and for me .. vaccinations have too many cons in ingredients and possible side effects. Everyone has their own opinion.. so what might seem right to someone.. might seem wrong to others.. I go based on not only what I read.. but what my body tells me.. and if something affects me negatively.. I am staying away from it.

    The Chicken Fajitas wit the Mexican (Cauliflower) Rice looks sooo good !! I've been looking for ways to incorporate more vegetables in my meals in a creative way ! Thank you !

  5. The bribe at the bottom is pretty shady, for sure! Is vaccination (prevention of disease) not a good enough reason to vaccinate your child? Yes, there was a single study done that linked vaccination with autism that has been thoroughly debunked, just a rouge scientist with an axe to grind.

    And the flu shot itself has no live virus, so you can't get the flu from it. It's just a psychosomatic response.

    As for the merits of vaccination, there are plenty of nasty diseases out there you should be vaccinated for. And then there's things like the flu... I had all my standard shots when I was a kid, got the chicken pox too. I've never had a flu shot, though I've never had the flu either. Not planning on starting that habit anytime soon. There's actually little benefit for an individual getting the flu shot, but I reap the benefits of others getting the flu shot. They cannot become infected, so they ultimately cannot infect me. I tell all my co-workers to get their flu shot, I don't want to catch whatever they catch!

  6. First, I'd like to say that this recipe looks great!

    Second, I'd like to comment on that letter. I have a master's degree in public health, have worked in government and research, and am currently attending medical school. I am mostly against vaccinations because the risks outweigh the benefits, and vaccine efficacy has never been proven. Before vaccinating, parents should do their own research and make the choice that they feel is best for them. I would not recommend giving shots to a child before age 2.

  7. I have really enjoyed reading the comments about this letter. This is a very serious decision that each parent has to make in the best interest of their child. Looking back when we made those decisions I don't think we realized that we had a choice like you do today. I am grateful that we live in a country where we can have this debate and come to our own informed decision for our family.

  9. Interesting way of trying to get parents down to the pediatrician! But, I see that McDonald's is on there and understand that it may not be the healthiest option for families, but what is unhealthy about Target, Rite Aid and Meijer? As for vaccination, it (like many things) is a personal preference and I think that every family has the right to make up their own minds and do what they think is best. Don't think they should be throwing incentives at people - clearly if they have not come in, that family has probably decided not to get the vaccinations.
